Homemade cookies are fun to make and there's just nothing better. With school starting, cookies are always handy to have around. They are perfect in lunchboxes and they make great after school snacks. Try these recipes soon for some delicious treats from your oven. The Coconut Chews are bar cookies with a Citrus Icing and are very good. Hello Dolly is also a bar cookie. Both are easy and delicious.
COCONUT CHEWS WITH CITRUS ICING
3/4 cup shortening
3/4 cup confectioners' sugar
1 1/2 cups flour
2 eggs
1 cup brown sugar
2 tbsp flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
1/2 cup chopped walnuts
1/2 cup flaked coconut
Orange-Lemon Icing (recipe follows)
Preheat oven to 350 degrees.
Cream shortening and confectioners' sugar; blend in 1 1/2 cups flour. Press mixture into the bottom of ungreased 13x9x2-inch pan. Bake 12 to 15 minutes. Mix together the remaining ingredients, except icing, and spread over the hot baked layer. Bake 20 minutes more. While warm, spread with the orange-lemon icing.
Orange-Lemon Icing:
1 1/2 cups confectioners' sugar
2 tbsp butter, melted
3 tbsp orange juice
1 tsp lemon juice
Mix the butter, orange juice and lemon juice into the confectioners' sugar. Use to spread over the warm Coconut Chews.
HELLO DOLLY
This is a recipe from a lady I did volunteer work with at the elementary school my oldest daughter attended many years ago. I hope you will enjoy it as much as we did.
1 stick margarine
1 cup graham cracker crumbs
1 cup coconut
1 cup chopped nuts, optional
1 cup chocolate chips
1 can sweetened condensed milk
Preheat oven to 300 degrees. Melt the margarine in a 9-inch square pan. Put the graham cracker crumbs over the melted margarine, then layer the coconut, chopped nuts (if using), and the chocolate chips. Pour the sweetened condensed milk over the top of the layers. Bake at 300 degrees for 30 minutes. Allow to cool before cutting.
